Quick, vegan protein-breakfastbowl

I’m back again for a new recipe to share. It’s not really something super special, but I like the sweet and acidic taste.
This bowl is full of some plant based protein from the quinoa & the chia seeds – these also give us some essential fats. The matcha gives us enough healthy energy through the day! I mostly eat this breakfast after my workout, but also when I have to eat outside  – for example when I went to work, school or be with friends – because you can easily take this with you on the go.

So here is my delicious new recipe:
For one portion you will need:

♥ 4 Tbsp of Quinoa (I used a mix of dark and white quinoa)
♥ 1,5 Tsp of Chia seeds
♥ 1 Tbsp of spelt oats
♥ 1/4 Tsp of matcha
♥ a bit of almond milk
♥ sweetener of your choice (I used honey, vegans could use maple or rice syrup)
♥ 1-2 Tsp of raspberry vinegar
♥ toppings

First take the quinoa into a saucepan and cover it with some water (the water should be cover it up to one centemeter over the top). Then turn the stove to high heat. When the water cooks turn the heat to medium high heat and let it cook for 10 minutes. After this time turn the heat down and cover the saucepan with a lid – let it rest for another 10 minutes.
Meanwhile mix the almond milk (about 1/2 cup) together with the matcha & the sweetener. Then put the chia seeds and the oats into this bowl and let them rest until the quinoa is ready.
Mix the quinoa into the soaked oats and mix the vinegar in it.
Now its time to serve – top your breakfast with whatever you like. I like some thin apple strips, coconut yoghurt, almond butter and pomegranate. But thats up to you!
