I’m here for another recipe – YAY 😀
So today’s recipe is my new favorite pancake recipe:
it’s GLUTEN FREE, SUGAR FREE, DAIRY FREE & VEGAN
Let me show you what I mean…
So for two batches you will need:
(you can put the other half into the fridge for at least 3 days)
♥ 180g steamed/cooked sweet potatoes
♥ 75g buckwheat flour
♥ 75g rice meal flour
♥ 2tsp. baking powder
♥ 1Tbsp coconut oil
♥ a pinch of salt & vanilla
♥ 100ml sparkling water
♥ 1 cup/225ml almond milk
♥ 2tbsp rice malt syrup
you can use what ever your heart desire!
examples I used: molasses, berries, pomegranate, homemade Nutella, honey (not vegan), maple syrup…
-in a kitchen machine mix everything together except the sparkling water.
-preheat a nonstick pan to middle high heat and put some extra coconut oil in it.
-at this point you have to fold in the sparkling water. (be careful to not overmix the batter).
-put ¼ cup of batter into your pan and flip when bubbles come to the top.
I often fry 3 pancakes at the same time, so the first one is still hot when my last one is finished.
